Today this salad was inspired by finding organic purple kale at the grocery store yesterday. It is a salad that has a creamy yet zingy dressing that will leave you smiling ear to ear! You can use any kind of kale to make this salad.


  • 2 bunches of kale
  • 5 carrots grated
  • 1 red pepper chopped
  • 2 ½ tbsp raw organic tahini
  • 1 large date
  • ½ cup apple cider vinegar
  • 1 juice of lemon


Rip the kale off the stem in bite size pieces.
Add all veggies in a big bowl. Add dressing and mix all
together. This salad is best when left in the fridge overnight.
